Original recipe called for 1/2 cup sugar, which I reduced to 1/4 and find the muffins plenty sweet; original recipe called for wheat flour, which I replaced with barley due to allergy

Recipe Ingredients for Vegan Yam Spice Muffins

2 cups barley flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cups yams
1/2 cup water
1/2 cup raisins

Recipe Directions for Vegan Yam Spice Muffins

  1. Yam should be pre-baked. I just used 1 yam without worrying about exact measurements, and left the skin on when I mashed it.

  2. Preheat the oven to 375F.

  3. In a large bowl mix flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

  4. Add yams, the water, and raisins; stir until just mixed.

  5. Lightly coat a muffin pan with vegetable-oil spray (a non-oiled non-stick pan works fine). Fill cups to the top. Bake for 25 to 30 minutes, or until the top of a muffin bounces back when pressed lightly.

  6. Let stand for 1 to 2 minutes before removing from the pan. When cool, store in an airtight container.
