Recipe Ingredients for Vegan wheat-free pumpkin waffles

2 1/2 cups barley flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground or freshly grated nutmeg
1/4 teaspoon ground cloves
2 cups rice milk
15 ounces pumpkin
1/3 cup oil
1/3 cup brown sugar
2 teaspoons vanilla extract

Recipe Directions for Vegan wheat-free pumpkin waffles

  1. Preheat waffle iron according to the manufacturer's instructions.

  2. Sift together the flour, baking powder, baking soda, salt, and spices. In a separate bowl, vigorously whisk together the soy milk, pumpkin, oil, brown sugar, and vanilla until well emulsified.
