Recipe Ingredients for Vegan wheat-free protein bars

1 1/2 c rolled oats
1 c puffed millet cereal
1/2 c flax meal
3 2/5 oz (1 c) soy protein
4 servings (.25 c) agave nectar
1/4 c brown rice syrup
5 dates
1 tsp vanilla extract
1 tsp almond extract (if you want an almond flavor, if not, omit)
1 tsp cinnamon

Recipe Directions for Vegan wheat-free protein bars

  1. REMOVE DATE PITS. Grind dates with some water into a paste in food processor.

  2. Preheat oven to 350.

  3. Toast oats, puffed rice, and flax for a couple minutes. Add to mixing bowl with protein powder.

  4. Heat up agave nectar and brown rice syrup until foaming. Turn off heat, add date/fig paste. Turn heat back on low, mix until combined. Add vanilla, almond extract, and cinnamon.

  5. Pour wet mix into dry, mix well.

  6. Spread into a glass baking dish sprayed with cooking oil. Press down well with spatula covered with wax paper.

  7. Put in the oven for a few minutes, just to solidify them a bit. Remove and let cool. Score into 10 equal bars, wrap. Store in freezer or fridge.
