Adapted from a recipe from a friend. I've tried it with totally gluten-free flour, but it was a mess.

Recipe Ingredients for Vegan, wheat-free banana muffins

2 cups barley flour
1 1/2 tsp baking powder
1/2 tsp baking soda
5 3/10 servings earth balance
1/2 cup turbinado sugar
3 medium bananas
3 tbsp soymilk
1 tsp vanilla

Recipe Directions for Vegan, wheat-free banana muffins

  1. Note: 5.3 servings earth balance = 1/3 cup

  2. Cream together margarine and sugar. Add mashed bananas and mix well. Add soy milk and vanilla and mix again.

  3. Mix wet and dry ingredients together.

  4. Bake 17-22 minutes in 350 degree oven for muffins, 45-50 minutes if making in a loaf pan.
