A bit like vegan sausage rolls

Recipe Ingredients for Vegan wellingtons

1/2 cup
210 g puff pastry
1/2 cup
1/4 cup walnuts
1/2 cup bran
1 tbsp soy sauce
1/2 tbsp peanut butter
1/2 tbsp mustard
1/2 tsp sage
1/2 tsp thyme

Recipe Directions for Vegan wellingtons

  1. Preheat oven

  2. Blend rice, walnuts and chickpeas

  3. Mix with the rest of the ingredients and knead until it sticks together

  4. Roll out pastry and cut into 6 rectangles of 6" by 4"

  5. Divide mixture into six and shape into loaves

  6. Wrap in the pastry pieces ensuring all of the filling is covered

  7. Bake at 200 degrees for about 25 minutes
