Easy and yummy! i found this recipe from an online website, but did a minor modification to it. you may replace the raisin and walnuts with anythng you like (chocolate chips, banana, etc)

Recipe Ingredients for Vegan Walnut and Raisin Bread Pudding

5 1/2 cups bread
1/4 cups raisin
1/4 cups chopped walnuts
2 1/4 cups soy milk
1/4 cups brown sugar
1/2 tablespoon cinnamon
1 teaspoon vanilla extract

Recipe Directions for Vegan Walnut and Raisin Bread Pudding

  1. preheat oven (350'F)

  2. prepare 5 1/5 cups of cubed bread

  3. in a separate bowl, mix vanilla extract, raisin, walnuts, soy milk, and brown sugar (you may choose to add a little bit of maple syrup ~ 2 tbsp and almond extract)

  4. add 1/4 teaspoon of cinnamon

  5. beat mixture till well mixed

  6. add mixture to the bread and mix.

  7. leave the bread mixture for 10minutes until the bread absorbs most of the liquid

  8. transfer it to a baking dish and sprinkle the rest of the cinnamon on the top (you may add more if you like cinnamon)

  9. baked for 30-40 minutes or till it is puffy and brown on the top
