Recipe Ingredients for Vegan Veggie Skillet

6 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
12 oz Extra Firm Tofu
1 cup, pared, chopped Cucumber, Peeled
6 clove Garlic
2 cup Spinach
360 cal Whole Kernel Sweet Corn
440 cal Black Beans
12 olives Large Pitted Olives
6 medium Mushrooms
1.5 cup, chopped Carrots
1 serving Table Blend Salt Free Seasoning Blend
2 tbsp Extra Virgin Olive Oil
1 dash Salt, Table
270 cal Cheddar Style Wedge

Recipe Directions for Vegan Veggie Skillet

  1. Prepare, wash, and chop all vegetables.

  2. Place potato slices in pan with olive oil and cook until soft and lightly brown.

  3. Lightly sprinkle salt on both sides of potatoes after flipping them.

  4. Slice tofu into strips and place in bowl. Mix tofu into a crumbled mixture.

  5. In another pan fry the tofu until it is lightly brown and fluffy.

  6. When the tofu is done cooking add the mixture to the potatoes.

  7. Continue by adding all other vegetables and ingredients to the potatoes and tofu.

  8. Add Daiya cheese to the top, let melt, and then let food simmer for 5 - 10 minutes before eating.
