I got the recipe from the site below: http://sketch-freeveganeating.blogspot.com/2012/01/veggie-rice-bean-burrito-w-chickpea.html I used whole wheat tortillas and I'd definitely make them again. I altered the recipe a bit based on what I had on hand. I made 7 burritos out of the contents I listed.

Recipe Ingredients for Vegan Vegetable & Rice Burrito Filling

200 g zucchini
100 g onion
540 g Unico Romano Beans
3 tsp chili powder
1 tsp cumin
3/4 tsp sea salt
1/2 tsp ground pepper
30 g parsley
67 g lime
3 cloves garlic
1/2 cup salsa
2 tsp olive oil

Recipe Directions for Vegan Vegetable & Rice Burrito Filling

  1. Cook onion, red pepper, zucchini, and garlic in a frying pan with oil. Cook until the vegetables are cooked through.

  2. Once veggies are cooked through add salsa, beans, rice, and spices. Cook for a minute or two.

  3. Add in the rest of ingredients (Parsely or cilantro, lime/lime juice, and any additional seasoning).

  4. Spoon mixture into burritos and fold them into the standard burrito shapes (or however you prefer to prepare them).

  5. Makes 7-8 burritos.
