Delicious raw veggie/fried tofu stir fry...mmmm!

Recipe Ingredients for Vegan Veg Fu Yung

15 oz tofu, Extra firm, pressed and cut into 1" cubes
1 bunch broccoli
1 red pepper, strips
2 green onions, thin bias cut
3 stalks celery, bias cut
3 carrots, bias cut
1 cup mung bean sprouts
2 tbsp peanut oil
2 tbsp sesame oil
1/3 cup tamari
1/2 cup maple syrup
2 tbsp garlic, minced
2 tbsp ginger, minced
1/2 cup roasted peanuts

Recipe Directions for Vegan Veg Fu Yung

  1. 1. Press block of tofu for at least 15 minutes.

  2. 2. 3Chop veggies while tofu is draining

  3. 3. Cut tofu into 1" cubes.

  4. 4. Heat peanut and sesame oil in a non-stick pan and gently place tofu in hot oil.

  5. 5. Turn each piece of tofu until each side is golden (takes ~40 minutes total).

  6. 6. Drain remaining oil out of pan.

  7. 7. Pour tamari over tofu in pan and cook until most of the tamari cooks down.

  8. 8. Pour maple syrup, ginger, garlic, and peanuts over tofu and cook until sauce thickens.

  9. 9. Pour hot tofu and sauce over the raw veggies and enjoy!

  10. 10. Makes delicious leftovers (even cold)!
