Recipe Ingredients for Vegan "Tuna" Salad

2 cups garbanzo beans, drained (cup)
1/4 small red onion, minced
2 stalks celery, minced
2 pickle slices, minced
1 T Soy Sauce
1 T dijon mustard
2 T mayo (I use the Earth Balance Olive Oil Vegan "Mayo")
1/2 T nutritional yeast flakes
1/2 t Kelp
1 t lemon juice

Recipe Directions for Vegan "Tuna" Salad

  1. Mash up the garbanzo beans with a potato masher.

  2. Stir in all all other ingredients.

  3. Refrigerate or serve right away.
