This is my creation and is delicious. Many substitutions listed so read carefully.

Recipe Ingredients for Vegan Thanksgiving Stuffing by Kindal

300 grams Bread
1/2 c Low Sodium Buttery Spread
2 cups chopped celery
2 leeks, chopped
1 tsp ground sage
1 tsp thyme
1 tsp marjoram
1/2 tsp allspice or nutmeg
1 c pecans
3 cloves garlic minced
1 c low sodium vegetable broth
1/4 c orange peel
1/2 c chopped dried apricots
1/2 tsp white pepper
1 c apple sauce

Recipe Directions for Vegan Thanksgiving Stuffing by Kindal

  1. Saute chopped up celery, leeks and garlic in the butter in a large skillet.

  2. Pour mixture into a large bowl

  3. Add the white pepper, sage, marjoram, thyme, nutmeg or allspice. Mix together with a whisk.

  4. Add to bowl bread crumbs; I would use a mixture of low sodium breads such as cornbreads, ezekial breads and so on-6 to 8 cups worth.

  5. Add chopped apple or a combination of the following; prunes, dates, figs, whole cranberries, raisins. I like 1/2 cup each of a combination.

  6. Add nuts; may use pecans, walnuts, chestnuts, pinenuts, waterchestnuts, whichever you like but make sure they are chopped medium.

  7. 1 large egg vegans substitute or 1 C applesauce

  8. Add 1/4 cup of orange zest, apple juice, cranberry or prune juice, almost anything you like.

  9. Add the one cup of low sodium Vegetable broth

  10. Mix all ingredients well. Let sit for about 20 minutes to allow all the wet ingrediens to incorporate with the dry. It should be very moist if not add more vegetable broth or juice.

  11. Bake in a casserole dish with lid or covered with foil at 350 degrees for about 1/2 hour then take off lid or foil and brown the top.

  12. This is really a hit and I get loads of compliments.

  13. * You may choose to add Vegan sausage
