Recipe Ingredients for Vegan "Teesy" Beans and Rice

1 cup Rice, Brown, Long-grain
1 1/2 cup Kidney Beans, Organic
1 onion
1 red pepper
1 1/2 cup Organic Diced Tomatoes with Green Chiles
3 serving Bragg Premium NUTRITIONAL YEAST SEASONING
2 tsp chili powder
1/4 tsp salt
140 g Cheese Alternative
1/4 cup cilantro

Recipe Directions for Vegan "Teesy" Beans and Rice

  1. Pre-heat oven to 350.

  2. Cook rice according to package directions (I like to cook mine in a little vegetable broth to boost the flavor).

  3. Once the rice is done, mix in the drained and rinsed kidney beans and set aside.

  4. Saute diced onion and diced pepper in a little vegetable broth or water for 5 minutes or until onion is golden.

  5. Stir in the tomatoes, 2 tbsp nutritional yeast, chili powder and salt. Bring to a boil, and then remove from heat.

  6. Combine the bean and rice mixture with the tomato mixture, 4 servings of Teese creamy cheddar sauce (4 oz/112 grams) and cilantro.

  7. Lightly spray a 2-quart baking dish with cooking spray. Transfer the mixture to the baking dish. Cover and bake at 350 for 30 minutes or until heated through.

  8. Uncover, sprinkle with remaining 1 Tbsp nutritional yeast and Teese Sauce. Bake 5-10 minutes longer.

  9. Let mixture set for 10 minutes before serving. Garnish with cilantro if desired.
