Veggie tamale pie, delicious main course. Crunchy cornmeal topping adds perfect crunch to the mexican flavors of this veggie dish. This is an extra large serving. Halve for normal servings.

Recipe Ingredients for Vegan Tamale Pie

1 cup TVP
2 cups Beans, Black, Mature Seeds
1 medium Onions
2 Peppers, Sweet, Green
32 oz. Tomato Products
1 cup Olives, Ripe, Canned (Small-extra Large)
2 clove Garlic
4 tsp Salt, Table
4 tsp Chili Powder
1 Pepper, Black
2 cup Cornmeal, Whole-grain, Yellow
1 tsp Salt, Table
4 cups Water
1 tbs Oil, Vegetable Corn, Salad Or Cooking

Recipe Directions for Vegan Tamale Pie

  1. Cook onion and green pepper and in large skillet till veggies are tender. Stir in tomato sauce, olives, garlic, beans, tvp, 1 tsp salt, chili powder, pepper. Simmer 25 minutes or until thick. Turn into greased casserole dish.

  2. Cornmeal topper: Stir cornmeal and 1 tsp salt into cold water. Cook and stir until thick, add oil. Spoon over veggie mixture.

  3. Bake at 375 for 40 minutes. Let cool.
