Recipe Ingredients for Vegan Sweet & Sour Haricot Beans

6 oz haricot beans, dried, boiled in salted water
1 tbsp olive oil
8 oz leeks, diced
8 oz carrots, diced
8 oz turnips, diced
5 oz bell pepper, sliced
3 tbsp arrowroot
1 tsp bouillon
250 ml apple juice
125 ml white wine vinegar
3 tbsp soya sauce
2 tbsp orange juice, fresh
1 tsp ground cardamom
1 tsp ginger root, grated
7 g garlic

Recipe Directions for Vegan Sweet & Sour Haricot Beans

  1. Soak & cook dried beans according to packet instructions

  2. Heat oil & gently fry leek,carrots, turnip & pepper for 10 mins

  3. Mix all remaining ingredients together, ensuring arrowroot is fully dissolved.

  4. Add sauce to veg & bring to boil stirring constantly. Cook until sauce is thickened & clear & the veg are at desired crispness.

  5. Serve hot with rice.
