Recipe Ingredients for vegan sweet potato curry raisin stew

2 sweet potato
2 celery stalk
1 green pepper
1/2 red onion
19 oz diced tomato
12 oz extra firm tofu
900 ml organic vegetable broth
2 clove garlic
2 tsp ginger root
1 tbs cilantro
1 tbs tahini
2 tbs extra virgin olive oil
1 tbs curry powder
2 tsp cumin
2 tsp chili powder
1/4 tsp salt
1 tsp ground black pepper
15 oz chick peas
3 raisins

Recipe Directions for vegan sweet potato curry raisin stew

  1. Chop all veg and potatoes to your desired size for stew

  2. Heat oil in large pan

  3. Add onion and cook for 3-5 minutes

  4. Add garlic and ginger until fragrant approx 1 min

  5. Add celery, cook for 2 minutes
