Healthy vegan burgers made from sweet potatoes, black beans and quinoa

Recipe Ingredients for Vegan Sweet Potato Black Bean Burgers

15 oz black beans, drained + rinsed
26 oz Sweet Potato (oz) (oz)
1/2 c frozen or fresh corn
1/2 c finely chopped onion
2 clove garlic cloves
1/2 c cooked quinoa
6 T rolled oats, partially ground
2 T sunflower seeds
1/2 t salt
1 black pepper
1 t cumin
1 t oregano
1/4 t coriander
1 t chili powder
1/4 t cayenne
1 T olive oil

Recipe Directions for Vegan Sweet Potato Black Bean Burgers

  1. peel, cube and steam sweet potatoes

  2. mash black beans

  3. combine all ingredients and form into 8 patties

  4. bake at 375 for 25-30 minutes, flipping half way thru.
