Vegan sundried tomato and basil pesto

Recipe Ingredients for Vegan Sundried tomato basil pesto

60 grams Pine Nuts
3 serving Extra Virgin Olive Oil
2.3 oz Basil, Fresh
21 grams Tomatoes, Sun-dried
2 cloves, raw Garlic

Recipe Directions for Vegan Sundried tomato basil pesto

  1. Soak 1/2 cup of raw pine nuts in cold water overnight

  2. marinate 21g of sundried tomatoes in 3 tbsp of extra virgin olive oil

  3. Add pine nuts, garlic and tomatoes to food processor with half of the olive oil

  4. process for about 1 minute

  5. add a little salt -( to taste)

  6. squeeze in the juice of half lemon

  7. process againfor another minute or so

  8. Add half the basil and processs

  9. Squeeze in the other half of lemon

  10. process

  11. Add the remaining basil and process

  12. Add the remaining olive oil and process until smooth (or your desired consistency)
