These are cut-out sugar cookies, from the Joy of Vegan Baking, p. 119.

Recipe Ingredients for Vegan Sugar Cookies

1 3/4 cups flour
1/2 tsp baking powder
1/2 cup nondairy butter
3/4 cup granulated sugar
1 1/2 tsp Ener-G Egg Replacer
2 tbsp water
1 tsp vanilla extract

Recipe Directions for Vegan Sugar Cookies

  1. Line 2 baking sheets with parchment paper.

  2. In a bowl, combine the flour and baking powder. Set aside.

  3. In the bowl of your electric mixer, beat the butter and sugar until light and fluffy, 3-4 minutes. Add the egg replacer, water, and vanilla and beat for at least another minute. Finally, add the flour mixture and beat until you have smooth dough.

  4. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about 1 hour, or until firm enough to roll. When ready to bake, preheat the oven to 350 F.

  5. Make cookies using cookie cutters and place them on the baking sheet. Place the baking sheets in the refrigerator for 10-15 minutes.

  6. Bake the cookies for 12-15 minutes, or until they begin to brown around the edges. Remove from the oven and let cool. Decorte if desired.
