Recipe Ingredients for Vegan Stuffed Peppers

3 red bell peppers
1 can tomato sauce
8 tablespoons black olives, sliced
1/2 cup brown rice
1/2 cup green onions, chopped
1 ear corn, medium
2 cloves garlic, minced
2 tablespoons taco seasoning

Recipe Directions for Vegan Stuffed Peppers

  1. Prepare 1/2 cup dry brown rice according to package instructions (I use a rice cooker and 1 cup water).

  2. Prepare the ear of corn by removing the husk and silk. Wrap in a damp paper towel and microwave for 5 minutes. Leave wrapped in the microwave, and allow to cool for about one minute. Once cool, cut the kernels off the cob.

  3. In a large skillet, sautee garlic in cooking spray until very slightly brown. This takes some of the edge off the garlic flavor.

  4. Add to skillet brown rice, tomato sauce, corn, olives, green onions. Combine well. Add Tabasco sauce to taste, as well as taco seasoning.

  5. Remove stems, cores and seeds from red peppers. Spoon the skillet mixture into the peppers. Bake at 350 for 35-40 minutes.
