Delicious strawberry rhubarb pie- makes a thing inside and is juicy and delicious! This was my first attempt trying rhubarb and it was definitely a success!

Recipe Ingredients for Vegan Strawberry Rhubarb Pie

1 crust, single 9" Pie Crust, Standard-type
1 crust, single 9" Pie Crust, Standard-type
24 oz Strawberries
4 cup, diced Rhubarb
0.5 cup, packed Sugars, Brown
0.5 cup Sugars, Granulated
0.188 cup Cornstarch
0.063 cup Gold Medal Unbleached All Purpose Flour
0.5 lemon yields Lemon Juice

Recipe Directions for Vegan Strawberry Rhubarb Pie

Mix fruit (chop rhubarb into half inch pieces and slice large strawberries in half), lemon (juice of half a lemon and zest of half a lemon), and sugars and sit for a few minutes until it gets "juicy". Then add cornstarch, flour, and cinnamon (optional). Mix well & spoon into bottom crust. Cover with top crust and cut holes in the top crust for venting. Wrap some foil around the edges of the crusts that are stuck together to prevent over-browning. Bake at 400 for 20 mins and then reduce to 350, remove foil, and bake for 40 mins. Let it cool & put it in the fridge to chill. DELICIOUS!
