Recipe from Manifest Vegan Blog. Can also add 2 tbsp agave nectar or brown rice syrup to the melted chocolate for added sweetness, but I found this to be unnecessary! I used Koala Crisp for the cereal- 100% organic, gluten-free cereal.

Recipe Ingredients for Vegan Star Crunch

7 dates
1 1/4 cup chocolate chips
3 tbsp soy milk
1 cup crispy rice cereal

Recipe Directions for Vegan Star Crunch

  1. De-pit the dates and mix in food processor until smooth. Roll date mixture into small balls, about 1 inch across.

  2. Cover a plate with crispy rice cereal. Place one disk of date into the cereal and cover thoroughly with the cereal while simultaneously flattening with your palm. You'll probably crush a few crispies or more if you press too hard!

  3. Once they are flattened, flip and cover other side will completely covered.

  4. Using a double boiler, melt chocolate, milk and sweetener if using. Take one disk and spread chocolate on one side with a butter knife. Place chocolate side down on a plate or dish (that will fit in your frezer) that is covered with wax paper. Then spread chocolate on the other side until completely covered. Repeat with remaining disks.

  5. Place in freezer until firm. Store in a cool place, out of the sun.
