Recipe Ingredients for vegan spinach mushroom phyllo triangles

20 oz Spinach
1 tbsp Olive Oil
1 slice, medium (1/8" thick) Onions
2 cloves, raw Garlic
2 cup, pieces or slices Mushrooms
12 oz Silken Tofu
1 lemon yields Lemon Juice
1 dash Pepper, Black
1/4 tsp Nutmeg
16 oz Phyllo Pastry

Recipe Directions for vegan spinach mushroom phyllo triangles

  1. cook all produce until softened. transfer filling to food processer, add tofu, lemon, spices and process until smooth.

  2. preheat oven to 375.

  3. take half the dough, unwrap, set remaining aside. cover with damp cloth to keep moist.

  4. cut each sheet into 3 sections. take 1 strip at a time. brush with olive oil, spoon small amount into corner of pastry and flag fold the pastry. place this on lightly oiled pastry sheet, and proceed with others.

  5. Bake for 15 minutes, serve warm.
