Recipe Ingredients for Vegan Spinach Lasagna

42 oz Tomato Sauce
6 oz. Tomato Paste
1 Onion
2 tbsp. Minced Garlic
1 tbsp. Olive Oil
10 oz. Whole Wheat lasagna noodles
20 oz. frozen spinach
18 oz. Firm Tofu
1/4 c. Light Soymilk
2 tbsp. Minced Garlic
2 tbsp. Lemon Juice
1 tbsp. Basil
1 tsp. Salt

Recipe Directions for Vegan Spinach Lasagna

  1. To make tomato sauce: saute onion and garlic in oil, add tomato sauce and paste, and season to your liking.

  2. Boil 12 lasagna noodles until done.

  3. Squeeze water for spinach and set aside

  4. Place tofu, milk, garlic, lemon juice, basil, and salt in blender. Blend until smooth. Stir in spinach.

  5. Layer pan with tomato sauce. Layer noodle, tofu mix, sauce, and repeat.

  6. Bake 350 for 40-45 minutes.
