Recipe Ingredients for vegan southwest mac and "cheese"

1 1/2 cups whole wheat macaroni, dry
1/4 cup nutritional yeast
1/4 cup spelt flour
2 t salt
4 cloves garlic
1 cup water
2 t olive oil
1 t mustard
1/8 t turmeric
1/8 t cumin
1/2 t chili powder
1 t cornstarch
19 oz canned kidney beans
29 oz canned tomatoes
1 t hot sauce
1 t oregano
1 t basil
1/4 t dried cilantro

Recipe Directions for vegan southwest mac and "cheese"

  1. Cook macaroni according to package directions and set aside. Combine yeast, flour, salt, garlic, mustard, and water and whisk until smooth. Add olive oil and heat over medium heat until thick and bubbly. Remove from heat. Add beans, tomatoes, and macaroni. Put back over low heat and add in cornstarch and spices and continue to cook until thick and heated through. Betcha can't tell that this isn't real cheese!
