spicy, vinegary, "hammy", greeny goodness - this tastes so much like ham-hick seasoned cooked all day greens it will make you cry! Was craving & this is what I came up with

Recipe Ingredients for Vegan Southern Collards and Black-eyed Peas

12 oz Mori-nu, Tofu, Silken, Lite Extra Firm
4 tbsp Olive Oil
1 tbsp Garlic Powder
1 tbsp Onion Powder
3 tsp Spices Crushed Red Peppers
16 oz Collards
1 cup Black Eyed Peas, Organic
3 tsp Natural Hickory
4 oz White Vinegar, Distilled, Organic

Recipe Directions for Vegan Southern Collards and Black-eyed Peas

  1. Place 1# frozen greens in pot with water to cover, liquid smoke & red pepper flakes. Cook till greens are very tender.

  2. Drain

  3. heat oil in pan

  4. removed tofu from package, pat dry, slice longways into 4 slices, season with onion & garlic powders

  5. place seasoned tofu in hot oil and brown well - till crispy like bacon. When browned, tear into bite size pieces & return to pan

  6. Add drained greens and sautee till they smell very fragrant

  7. add vinegar, stir to mix

  8. serve & enjoy! YUMMY
