Recipe Ingredients for Vegan sloppy Joes/spaghetti sauce

1 small zucchini
1 small carrot
1 small eggplant
1/2 pint canned tomato sauce
1/2 pint canned tomatoes
1/2 onion
2 cloves garlic
2 mushrooms
1 T. olive oil
1 T. soy sauce

Recipe Directions for Vegan sloppy Joes/spaghetti sauce

Fry the onions and garlic and mushrooms in the olive oil, add all the other ingredients including the veggie burgers and simmer until veggies are soft. Serve over spaghetti or toast.
