Recipe Ingredients for Vegan Sloppy Joes

1 tbs olive oil
1 red onion
1 green bell pepper
1/2 tbs chili pepper
1 can tomato paste
8 oz Tofurky Kielbasa
14 oz Gimme Lean sausage
1/4 cup carrots, minced
1 cup mushrooms, chopped
1/2 cup mushrooms, chopped
1/2 cup apple cider vinegar
5 plum tomatoes

Recipe Directions for Vegan Sloppy Joes

  1. Heat olive oil in a large skillet over medium heat. Add onion, celery, carrot, green pepper, and garlic: saute until tender.

  2. Stir in tomatoes, chili powder, tomato paste, vinegar, and pepper.

  3. Cover, reduce heat, and simmer 10 minutes.

  4. Stir in kidney beans, and cook an additional 5 minutes.

  5. Cut a 1/4 inch slice off the top of each kaiser roll; set aside. Hollow out the center of each roll, leaving about 1/2 inch thick shells; reserve the inside of rolls for other uses.

  6. Spoon bean mixture evenly into rolls and replace tops. Serve immediately.
