This vegan dish can have mushrooms, peppers, avocado, broccoli, onion, olives, spinach or carrots added to it. Just add the amount of veggies that you include to your meal and your calories will calculate. This is the base recipe.

Recipe Ingredients for Vegan Scrambled Tofu

2 g Cumin Powder
1 Teaspoon Thyme
0.5 tsp Turmeric, Ground
1 tsp Salt, Table
3 ice cube (3/4 fl oz) Water
2 1tsp Olive Oil
3 clove Garlic
14 oz Extra Firm
1/4 cup Yeast, Nutritional T6635

Recipe Directions for Vegan Scrambled Tofu

  1. Press your tofu between 2 plates lined with paper towels.

  2. Stir the spice blend together in a small cup. Mix in the water (3 tbsp) and set aside.

  3. Preheat a large, heavy-bottomed pan over medium heat. Add olive oil and sautee the garlic (and peppers or onion if adding) for about a minute.

  4. Break the tofu apart into bite-sized pieces and sautee for 10 minutes. Add broccoli and mushrooms now if using them.

  5. Add the spice blend and mix to incorporate.

  6. Add the nutritional yeast and fresh black pepper to taste.

  7. Stir in spinach, carrots and olives (if using).

  8. Top with sliced avocado (if using).
