Recipe Ingredients for Vegan Saag Aloo (Indian Spinach and Potatoes)

2 small yukon gold potatoes, diced and boiled
3/4 lb. fresh spinach
1/4 lb. swiss chard
1 small onion, chopped
1 clove garlic, minced
1 tsp. turmeric
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. crushed red pepper
1/2 tsp. cumin
1 salt and pepper
1 1/2 c. rice milk, unsweetened
2 tbsp. canola oil

Recipe Directions for Vegan Saag Aloo (Indian Spinach and Potatoes)

  1. In a saute pan, heat the oil. Add onions and cook until slightly caramelized. In a small bowl combine garlic with spices to create a paste.

  2. Cook spinach and swiss chard (either steam or boil) until wilted. Process in a blender until a slight puree forms. Set aside.

  3. Add the spices to the pan with the onions and allow the spices to cook in the oil. Don't worry if they stick, you will deglaze in the next step.

  4. Pour the rice milk into the spiced onion mixture and stir to combine. Mix in the cooked potatoes and spinach/chard puree. Simmer for 5 minutes until slightly thickened and deep rich green color.

  5. Serve hot over rice or with grilled naan bread.
