Vegan adaptation of a traditional Risotto alla Milanese

Recipe Ingredients for Vegan Risotto

4 c low sodium vegetable broth
2 T Original Natural Buttery Spread
2 T olive oil
1 T chopped g) Shallot
1 c Arborio rice
1/4 c apple juice
1 t paprika
1/4 c Veggie Shreds Cheese Food Alternative

Recipe Directions for Vegan Risotto

  1. Bring broth to a boil; reduce heat to low; keep warm.

  2. Heat butter and oil over medium heat; saute chopped shallot for 30-60 seconds.

  3. Add rice & cook 1-3 minutes, til edges become translucent; add apple juice (or white grape juice); add paprika; stir til juice evaporates.

  4. Reduce heat to medium-low; add broth 1/2 C at a time, stirring constantly til broth is absorbed; stir in "cheese".

  5. Salt and pepper to taste (most broth is salty enough).
