Vegan red lentil soup, delicious!

Recipe Ingredients for Vegan Red Lentil Soup

4 cups butternut squash, chopped
3 cups red lentils
1 medium onion, chopped
2 cloves garlic, minced
1/3 cup coconut milk
3 tsp curry powder
3 tsp ginger
1 1/2 tsp chili powder
1 1/2 tsp nutmeg
1 tsp coconut oil
1 cup chopped cilantro
3 pinches fenugreek seeds
6 tbsp tomato paste
8 cups water

Recipe Directions for Vegan Red Lentil Soup

  1. Saute onions and garlic with fenugreek seeds in oil until translucent.

  2. Add remaining ingredients(including cilantro) and bring to a boil.

  3. Simmer, covered, until cooked. Approx 30 minutes. Simmer longer for a smoother soup.

  4. Goes fantastic topped with more chopped cilantro, fresh chutney, chopped coconut and yogurt.
