Recipe Ingredients for vegan red bean and sweet ptoato curry

1 small Onions
1 tbsp Curry Powder
1 tsp Coriander Leaf, Dried
0.75 serving Ground Cumin
0.5 tsp Turmeric, Ground
1/4 tsp Cayenne
1 cup, chopped Peppers, Sweet, Green
2 cloves, raw Garlic
3 tsp Ginger Root
1.75 cup Vegetable Stock
14.5 oz Diced Tomatoes
15 oz Beans, Kidney, Red, Mature Seeds, Canned
2 cup, cubes Yam
1 dash Pepper, Black

Recipe Directions for vegan red bean and sweet ptoato curry

  1. saute onion 5 mintures stir in the curry, coriander, cumin, turmeric and cayenne.

  2. add pepper, garlic, ginger and cook for 30 seconds.

  3. add stock, tomatoes with juice and bring to boil,

  4. reduce heat to low add beans and diced sweet potatoes.

  5. season with salt and pepper, cover, simmer until veggies are tender.

  6. serve hot.
