Super fast (about 20-30min), vegan, low calorie, delicious. Easy to vary.

Recipe Ingredients for Vegan Quinoa

1 c quinoa (dry)
1/4 large vidalia onion
3 cloves garlic
2 tbsp extra virgin olive oil
8 oz sliced baby bella mushrooms
14 1/2 oz can) Diced Tomatoes, No Salt Added
5 sprigs Cilantro
2 scallions
1 tbsp Chili Garlic Sauce

Recipe Directions for Vegan Quinoa

  1. Cook quinoa (simmer 1 c dry quinoa in 2 c water until all water is gone)

  2. Saute onion, garlic and mushrooms in a large chef's pan (or frying pan) until mushrooms shrink and onion is clear.

  3. Add tomatoes, cilantro, scallions and chili paste to pan.

  4. Saute for a bit, add salt/pepper to taste.

  5. Add quinoa to pan, cook together.

  6. Eat. Yummy.
