Recipe Ingredients for Vegan Pumpkin Pie

2 cups oats
1/4 cup honey
3 dates
1 cup canned pumpkin
1/4 cup Almond Milk
1/4 cup brown sugar
1 tsp Cinnamon
1 tsp Pumpkin Pie Spice
1 tsp Vanilla Extract

Recipe Directions for Vegan Pumpkin Pie

  1. Grind oats into meal in coffee grinder or other appliance.

  2. Blend oats with honey & dates in food processor. Pulse until dough forms.

  3. Press dough into pie pan.

  4. Combine the filling ingredients in a pot over medium heat while whisking.

  5. Keep on heat source until everything is incorporated (3 minutes or so) and then pour mixture into pie crust.

  6. Put pie in freezer to set for about 4 hours. Keep in freezer until a half hour before you're ready to serve it.

  7. Just the thinnest layer of icy condensation will form on top, but after 5 minutes at room temperature, it'll be gone.
