1/2 tsp. salt 1/4 cup soy milk Pie Crust: 1 cups all-purpose flour 1/2 tsp. salt 1/3 cups shortening, plus 1 tbsp. 2 - 3 tbsp. cold water

Recipe Ingredients for Vegan Pumpkin Pie

15 oz. Libby's canned pumkin puree
12 oz. package lite silken tofu, drained and cut into cubes
48 tsp. splenda (1cup)
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves

Recipe Directions for Vegan Pumpkin Pie

  1. Preheat oven to 425℉

  2. Cream the pumpkin filling and splenda together in a blender.

  3. Add the 12 oz. of tofu (pat the outside of the tofu with a paper towel so it's not as wet, then cut the tofu into cubes before placing it into the blender.)

  4. Add the salt, spices, and vanilla.

  5. *Soy milk is optional. Use 1/4 cup of soy milk if the filling is too thick to blend.

  6. Continue mixing all of the ingredients until the consistency is smooth.

  7. Put the filling into the crust and bake for 15 minutes at 425℉.

  8. Then turn the heat down to 350℉ for an additional 35 minutes until pie is done.

  9. ●Crust:

  10. Measure flour and salt into bowl. Cut in shortening thoroughly. Sprinkle in water, 1 tablespoon at a time, mixing until all flour is moistened and dough almost cleans side of the bowl (1 to 2 teaspoons water can be added if needed).

  11. Gather dough into ball; shape into flattened round on lightly floured cloth-covered board. With floured stockinet-covered rolling pin, roll dough 2 inches larger than inverted pie pan. Fold pastry into quarters; unfold and ease into pan. Trim overhanging edge of pastry 1 inch from rim of pan. Fold and roll pastry under, even with pan; flute.
