1 cup Whole Wheat Flour
1 cup dry Old Fashioned Quaker Oats
1/4 cup Original
0.5 tsp Baking Soda
0.5 tsp Baking Powder
0.25 oz (24 whole kernels) Almonds
0.5 tsp Salt, Table
1.25 tsp Cinnamon, Ground
1 tsp Vanilla Extract
1 medium (7" to 7-7/8" long) Bananas
0.33 cup Pumpkin

Recipe Directions for vegan pumpkin pie cookies

  1. Vegan Pumpkin Pie Cookies

  2. Ingredients:

  3. 1 chia egg (1 chia egg = 1 tsp ground chia + 2 tbsp water)

  4. 1 cup regular oats

  5. 1 cup whole grain flour

  6. 1/2 tsp baking soda

  7. 1/2 tsp baking powder

  8. 2 tbsp chopped walnuts (you can substitute with any other type of nuts)

  9. 1/2 tsp salt

  10. 1 1/4 tsp cinnamon

  11. 1 tsp vanilla extract

  12. 1/2 cup agave syrup (maple syrup will work too)

  13. 1 banana

  14. 3/4 cup canned pumpkin

  15. Directions:

  16. Preheat the oven to 375F.

  17. In a small bowl, make your chia egg by mixing 1 tsp of ground chia and 2 tbsp of water. Set the bowl aside.

  18. In a separate, medium sized bowl, mix dry ingredients together (oats, flour, baking soda, baking powder, salt, cinnamon)

  19. In another bowl, mix wet ingredients together (vanilla, agave syrup, mashed banana, canned pumpkin). Add in the chia egg and stir.

  20. Pour wet mixture into the dry mixture and mix until well-incorporated.

  21. On a well-greased baking pan, shape the cookies (this recipe makes ~12-13 large cookies). Bake for ~13-15 minutes.

  22. Remove from heat. Allow the cookies to cool for ~15 minutes. If you choose, drizzle with vegan buttercream icing (recipe can be found at the bottom)
