if you really want these to be vegan just omit the the melted chocolate mix and add a smidge extra cocoa and you should have very similar results.) these are AMAZING.

Recipe Ingredients for vegan ** pumpkin pie brownies

3/4 cup whole wheat pastry flour
15 oz pumpkin pie filling
1/2 cup sugar
1/3 cup cocoa powder
4 tbsp vanilla soy milk
3 tbsp cream
3 tbsp dark chocolate chips
1/4 cup coconut oil
3 tbsp cornstarch

Recipe Directions for vegan ** pumpkin pie brownies

  1. Pumpkin Brownie Layer:

  2. 1 cup canned pumpkin

  3. 1 large WAY overripe banana (we're talking almost trash worthy)

  4. 1/2 cup + 3 tbsp sugar

  5. 1/4 cup coconut oil, softened

  6. 3/4 cup whole wheat pastry flour

  7. 1.5 tsp pure vanilla extract

  8. 1 tbsp cornstarch (or arrowroot/tapioca)

  9. 1/3 cup dutch processed cocoa powder

  10. 3 ish tablespoons of melted chocolate chips (mixed with 2 tbsp of cream)

  11. 1/2 tsp sea salt

  12. 1/2 tsp baking soda

  13. Pumpkin Pie Layer:

  14. 1 cup canned pumpkin pie filling

  15. 2 tbsp cornstarch (or arrowroot/tapioca)

  16. 1 tsp pure vanilla extract

  17. 4 tbsp vanilla almond milk (or soy or coconut)

  18. 2 tsp pumpkin pie spice (or 1 1/4 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg)

  19. Shaved chocolate, for garnish

  20. Directions:

  21. Preheat oven to 350F and grease a brownie pan

  22. For brownie layer: In a stand mixer or by hand, mix together the coconut oil, pumpkin, vanilla, and sugar until blended well. added melted chocolate/cream mix) Sift in the flour, cocoa powder, cornstarch, baking, soda, sea salt and mix until incorporated.

  23. For pumpkin layer: In a large bowl mix together the pumpkin, vanilla, and milk. Slowly add the dry ingredients to the wet and mix well until all clumps are gone. spread over the brownie layer. shave chocolate on top if you want

  24. Bake for 30 minutes at 350F. Remove from oven and cool for 20-30 minutes and then move to the fridge to chill for 1.5 hours.

  25. Serves approx 13. Makes 13 smallish but decent brownies, if you want bigs ones I think this would serve 8-10.
