Altered these slightly from Isa's recipe to make them lower sugar and low fat.

Recipe Ingredients for Vegan Pumpkin Muffins

1 3/4 c whole wheat flour
1 cup sugar
1 T baking soda
1/4 t salt
1 t cinnamon
1/4 t nutmeg
1 c pumpkin
10 g vanilla soy yogurt
1/2 cup light soy milk
1 1/2 T canola oil
1/2 c unsweetened applesauce

Recipe Directions for Vegan Pumpkin Muffins

  1. Preheat oven to 400 degrees and line a mini muffin tin with muffin cups.

  2. Sift together all dry ingredients.

  3. Mix together all wet ingredients.

  4. Filly cups 3/4 of the way. (I use a pastry bag for this, it makes for MUCH easier distribution of muffin batter into such tiny cups!)

  5. Bake for 12-15 minutes.

  6. (NOTE) The nutritional information is for each muffin, just to make it easier for you to pick and choose how many you want!
