Recipe Ingredients for Vegan Pumpkin Muffins

1 3/4 cups flour
1 1/4 cups sugar
1 tbsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp ginger
2/5 tsp. ground cloves
1 cup pumpkin
1 tbsp. vanilla yogurt
1/2 cup rice milk
1/2 cup vegetable oil
2 tbsp. molasses

Recipe Directions for Vegan Pumpkin Muffins

  1. Mix the dry ingredients in one bowl, and the wet in another bowl. Combine the two and mix.

  2. Fill greased muffin cups 2/3 of the way.

  3. Bake 15-20 minutes on 400 degrees until a toothpick comes out clean.

  4. *I actually used soy yogurt instead of regular, but this program doesn't recognize that ingredient.
