only vegan if you substitute the egg (apparently ground flax works well). -you can completely sub in Agave nectar for the brown sugar, they'll just be more cake-like -a packet of Splenda also enhances the flavor

Recipe Ingredients for Vegan Pumpkin Cream Cheese Bars

1/2 cup spelt flour
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 large egg
5 T brown sugar
1/2 cup canned pumpkin
2 T Vanilla
2 T canola oil
1/2 tsp pure vanilla extract
84 grams Silken Tofu
2 3/10 tablespoons Vegan Gourmet Cream Cheese Alternative
1 1/2 tablespoons Agave Nectar

Recipe Directions for Vegan Pumpkin Cream Cheese Bars

  1. Preheat oven to 350 F.

  2. Combine dry ingredients, then add in wet.

  3. Spread into an oiled 88 pan and cook for 20 minutes.

  4. blend agave, cream cheese, and 1/4 cup firm silken tofu until fluffy

  5. wait until bars have cooled completely to slice and put on frosting
