Mixed results with this experiment. The consistency was off. Will either stick with the eggs or try a silken tofu but... deliciously sweet without the sugar added - just molasses and apples. Unfortunately, the canned pumpkin (a seasonal item) is now done at whole foods and trader joes. got some organic sweet potato puree but this will add more sugars so maybe i'll have to take it back to a single apple. btw, the reason there's no banana in this version was that mine are still green! a week later. Note, this recipe has no baking powder as it's dense and custard-like, similar to a bread pudding

Recipe Ingredients for vegan pumpkin clafoutis II (flax meal as egg replacer)

190 g pumpkin puree
20 g flax meal
1 tablespoon vanilla
260 g pink lady apples
23 g molasses
40 g 2% milk
1/4 teaspoon salt
60 g whole wheat flour
30 g buckwheat flour

Recipe Directions for vegan pumpkin clafoutis II (flax meal as egg replacer)

  1. mix wet ingredients

  2. stir in flax meal

  3. peel & grate apples and add them to wet ingredients

  4. mix flours & salt

  5. add to wet ingredients and stir until just mixed

  6. put in 9x6 (smallish) pan

  7. bake at 325 for about an hour (this version without egg took quite a bit longer to set)
