Yummy whole grain pumpkin bread with flax seed instead of eggs, and no refined sugars. Allow to cool before slicing, and it's even better the next day after the flavors have a chance to marry. Enjoy!

Recipe Ingredients for Vegan Pumpkin Bread

3 1/2 cups white whole wheat flour
2 teaspoons baking powder
1 teaspoon salt
1 tablespoon pumpkin pie spice
2 teaspoons cinnamon
1/2 teaspoon cloves
96 serving sucanat (2 cups)
2 cups pumpkin puree
2/3 cup water
4 tablespoons ground flax seed
12 tablespoons water
1/4 cup canola oil

Recipe Directions for Vegan Pumpkin Bread

  1. Mix oil, pumpkin, spices, and sucanat in a large mixing bowl

  2. In a separate bowl measure out 4 T. ground flax seed, and 12 T water stir to combine and add to pumpkin mixture, stir to combine

  3. Add 1 c water and 1 t salt, stir well.

  4. Add flour and baking powder, stir to combine

  5. Preheat oven to 350 degrees, and spray two 9x5 loaf tins with nonstick cooking spray.

  6. Divide batter evenly between the two pans, bake for about 1 hour, or until top springs back when tapped, and it begins to pull away from the sides of the pan.
