Recipe Ingredients for Vegan Pumpkin Bread

1 1/2 tbs milled flaxseed
1 1/2 tbs wheat germ
1/2 cup water
1 1/2 cups light brown sugar
1/2 cup unsweetened applesauce
1/2 cup canola oil
2 cups canned pumpkin
3 cups whole wheat flour
2 tsp cinnamon
2 tsp nutmeg
1 tsp allspice
1 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt

Recipe Directions for Vegan Pumpkin Bread

  1. Preheat the oven to 350 degrees.

  2. Mix together the flaxseed, wheat germ and water until thickened.

  3. Combine flax mixture in a large bowl with sugar, applesauce, oil, and pumpkin.

  4. In a medium bowl, stir together the flour, spices, baking soda, baking powder, and salt.

  5. Stir the dry ingredients into the wet. Lightly grease 2 loaf pans.

  6. Divide into two regular 8 inch loaf pans or four mini loaf pans.

  7. Bake large loaves for about 55 minutes or small loaves for about 40 minutes.

  8. Let sit for 20 minutes before removing from pan.
