Vegan Protein Bars Recipe

Homemade protein bars, with a 3:1 ratio of carbs to protein. They're vegan (there was no option for soy protein, so it's down as whey). There's no baking involved; they stay in the freezer until you're ready to eat them. They get sticky very rapidly at room temperature.

Recipe Ingredients for Vegan protein bars

1 1/2 cups rolled oats
1/2 cup chocolate chips
1/2 cup shredded coconut
1/2 cup raisins
1/4 cup chopped almonds
2 tablespoons flax seeds
1 teaspoon cinnamon
3 scoops vanilla whey protein powder
1 banana, mashed
1/2 cup maple syrup
1/2 cup peanut butter
1 teaspoon vanilla extract

Recipe Directions for Vegan protein bars

  1. Line a 9x13 pan with Saran wrap.

  2. Mix all the dry ingredients (the oats down to the powder) in a large bowl.

  3. Mix the wet ingredients in another bowl.

  4. Combine them in the larger bowl.

  5. Transfer the mixture to the pan, and smooth over with a spatula.

  6. Put the pan in the freezer. It takes several hours for the bars to set. Leave them in the freezer until you are ready to eat them.
