Yummy soup, could go well over rice. could use Poblano Chiles. Topped with Feta

Recipe Ingredients for Vegan Posole

3 pepper Anaheim Chile
1 tbsp Extra Virgin Olive Oil
1 medium raw Onion Red
4 cloves, raw Garlic
40 fl oz Organic Vegetable Broth
1 serving Paprika Smoked
1 tsp Garlic Powder
1 tsp Cumin
0.5 tsp Sea Salt
3 cup Hominy
1 cup Frozen Sweet Corn
1 avocado, NS as to Florida or California Avocados

Recipe Directions for Vegan Posole

  1. Roast the peppers until skin is black, either under the broiler or by holding with tongs over a gas stovetop. Put in a ziploc bag and let cool. (I suggest doing your other prep work while they cool.) Remove the skins and dice, scraping out the seeds and ribs if you don?t want too much heat.

  2. Heat oil in a large pot. Cook the onions and garlic until starting to brown, stirring frequently. Add chiles and cook a few minutes more. Add broth and spices, cover, and reduce heat to a simmer for 15 minutes. Add hominy and corn, cook another 10-15 minutes. Finish with cilantro or oregano and adjust salt to taste. Top with garnishes aplenty!
