Vegan Pesto Recipe

Creamy and quick, but by no means extra-healthy. I made this for a very picky family member. By all means, it is better to replace the spinach with basil, and it barely affects the nutrition.

Recipe Ingredients for vegan pesto

1/2 cup pine nuts
1 cup spinach
1 cup basil
2 cloves garlic, crushed
1/2 tsp salt
1 tbs lemon juice
1/4 cup olive oil

Recipe Directions for vegan pesto

  1. Heat a small pan on medium heat, no oil. Add the pine nuts and toast until very fragrant and lightly browned, stirring constantly, about 5 minutes. Remove from heat.

  2. Put nuts, leaves, garlic, salt, and lemon juice into food processor and whir together. Slowly pour olive oil in through top and blend until creamy.
