Recipe Ingredients for Vegan Pepperoni

124 4/5 grams Vital Wheat Gluten
12 grams Nutritional Yeast
22 4/5 grams Tapioca Flour
2 tsp Paprika
1 tsp Fennel Seed[whole
2 tsp Fennel Seed [ground]
3/4 tsp Garlic Powder
3/4 tsp Onion Powder
1/2 tsp Spices Crushed Red Peppers
1/2 tsp Cayenne
1/2 tsp Sea Salt
1/4 tsp Pepper, Black
3/4 cup (8 fl oz) Water
2 tbsp Ketchup, Low Sodium
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Vegan Pepperoni

  1. preheat oven to 350

  2. in med bowl combine all dry ingredients

  3. in sm bowl combine wet ingredients

  4. combine wet & dry ingredients & mix well

  5. kneed a few minutes, divide in half, roll into 2 logs about 7 inches long.

  6. wrap logs in foil, twist ends to seal

  7. place logs in 9" baking pan, add 1/2" water. Cover pan with foil.

  8. Bake 1 hour, turning over halfway through

  9. unwrap & cool 15 minutes, then refrigerate to firm up, 1-2 hours.

  10. Slice thinly w/serrated knife

  11. Use as is or fry if desired.

  12. wrap tightly. keeps 3-4 days in fridge, 3-4 wks in freezer

  13. makes about 1 pound
