Better than take out noodles and ethical to boot!! I eat this as a main alongside a huge basic low cal salad.

Recipe Ingredients for Vegan Peanutty Noodles

250 g linguine
1/4 cup peanut butter
2 tbsp soy sauce
2 tsp sesame oil
4 tsp lime juice
2 tsp garlic, minced
2 tsp ginger, minced
1/8 tsp cayenne pepper
1/2 cup spring onions, finely sliced
1/2 cup coriander, chopped

Recipe Directions for Vegan Peanutty Noodles

  1. Cook linguine according to the packet directions.

  2. Place peanut butter, soy sauce, sesame oil, lime juice, garlic, ginger and cayenne pepper in a medium bowl and whisk until well combined.

  3. Drain the noodles in a colander, add to the peanut sauce and toss until evenly coated.

  4. Add the remaining ingredients and toss again.

  5. Serve hot, warm or thoroughly chilled.
