Vegan Peanutbutter Oatmeal Chocolate Chip Cookies

Recipe Ingredients for Vegan Peanutbutter Oatmeal Chocolate Chip Cookies

3/4 cup vegetable shortening or 1 stick vegan margarine
1 cup brown sugar
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 cup chocolate chips, vegan-friendly semisweet
1/2 cup oats
3/4 cup soy milk
1/2 cup peanut butter
1/2 banana

Recipe Directions for Vegan Peanutbutter Oatmeal Chocolate Chip Cookies

  1. Mix all ingredients by hand and form into balls

  2. Place on cookie sheet lightly sprayed with cooking spray and press slightly to make into patties

  3. Bake at 350 for about 10-12 minutes or until lightly browned

  4. Store in airtight container or cookies will be super crunchy the next day
