So crunchy and delicious! Modified slightly from Isa Chandra Moskowitz and Terry Hope Romero's Vegan With A Vengeance.

Recipe Ingredients for Vegan Peanut-Butter-Oatmeal Cookies

2 cups whole wheat flour
2 cups oats
3/4 cups natural peanut butter
1/3 cup chopped walnuts
2 tsp baking powder
1 tsp salt
3/4 cup canola oil
1 cup white sugar
1 cup brown sugar
1/2 cup rice dream original enriched
2 tsp vanilla

Recipe Directions for Vegan Peanut-Butter-Oatmeal Cookies

  1. Mix together the dry ingredients.

  2. Mix together the wet ingredients and the sugar in a separate bowl.

  3. Add the dry ingredients to the wet ingredients.

  4. Drop balls of dough onto lightly greased cookie sheets.

  5. Bake at 350F for 8-10 minutes.

  6. Enjoy!
